Watch Rooftop Kitchen & Spirits, a new restaurant in Charleston, now offers a drink called the “Old Exchange,” obviously inspired by the Old Exchange Building and Provost Dungeon where the Declaration of Independence was read in 1776 and where South Carolina leaders met in 1788 to ratify the U.S. Constitution.
